Kish is an open pie with a juicy savory filling. This deliciously delicious dish comes from French cuisine. Traditionally, for quiche, the dough is kneaded using a special technology, from very cold ingredients. This is done in order to prevent the grains of butter from melting, which give the quiche its unique taste.

- For the test:
- -125 g frozen butter
- -250 g flour
- -1 chilled egg
- -3 tablespoons of ice water
- -salt pinch
- For filling:
- -400 g turkey fillet
- -70 g cranberries
- -150 g camembert cheese (can be replaced with any hard cheese)
- -30 g vegetable oil
- To fill:
- -1 egg
- -150 ml cream 20% fat
- -salt and pepper to taste
Instructions
Step 1
Sift flour through a sieve, mix with a pinch of salt.
Step 2
Coarsely grate frozen butter and mix with flour. Beat a chilled egg into the dough, pour ice water and add a pinch of salt.
Step 3
Knead the dough, form a ball out of it, wrap it in plastic wrap and put it in the refrigerator for an hour.
Step 4
Wash the turkey fillet and cut into cubes.
Fry in vegetable oil for 3-5 minutes until golden brown.
Step 5
Remove the prepared dough from the refrigerator. Grease a round baking dish with butter and place the dough in it.
Step 6
Make punctures in the dough and bake for 7-10 minutes at 160-170 degrees.
Step 7
Whip the cream with an egg, season with salt and pepper to taste.
Grate the cheese on a fine grater.
Step 8
Put the turkey fillet with cranberries in a mold with dough, pour the egg-cream mixture. Sprinkle with grated cheese on top.
Bake for 25-30 minutes at 170-180 degrees.
