Shish kebab is a traditional Caucasian dish and has long been loved by Russian gourmets. Chicken kebab is especially tender, since chicken meat has a less dense fiber structure than pork or beef. The Georgian version of the marinade will add additional exquisite notes to the dish.
It is necessary
- –Chicken fillet or chicken legs on bone (1-2 kg);
- - garlic (2-4 cloves);
- - tomato paste or tomato juice (240 g);
- –Soy sauce (25 ml);
- –Barberry (8-10 pcs.);
- –Sugar (15 g);
- - sums (5-7 g);
- - ground coriander (10 g);
- –Black pepper to taste;
- –Salt to taste.
Instructions
Step 1
Take chicken fillet, rinse well and cut into portions across the grain. Use a paper towel to dry each piece. If desired, you can leave the peel to make the kebab more juicy.
Step 2
Separately, prepare the spice mixture in advance. To do this, grind barberry, sumac, coriander, sugar, salt and pepper in a mortar with a wooden pestle. Stir the mixture.
Step 3
Chop or crush the garlic, add tomato paste (tomato juice), soy sauce. Put the pieces of meat in a deep bowl and cover with the marinade. Stir the meat with clean hands, spreading the marinade evenly between the pieces.
Step 4
Next, pour some warm drinking water into a bowl and stir again. Cover tightly with cling film and refrigerate for 6-10 hours.
Step 5
Drain the marinade from the bowl before cooking. Place each piece of chicken on a skewer. Vegetables such as courgettes or bell peppers of different colors can be strung between the meat.
Step 6
This kebab is prepared very quickly. Therefore, follow the process carefully. The meat is considered ready if clear juice is released when punctured with a knife. An ideal side dish for chicken fried over a fire is a salad of fresh vegetables.
