It is very difficult to resist juicy delicate fish. After cooking salmon in the glaze, a very tasty marinade remains, which can be used as a sauce for various dishes.
It is necessary
- 1/2 cup brown sugar
- 1/2 cup soy sauce
- - 1/2 glass of water;
- 1/2 cup sweet rice wine (mirin)
- - 2 pieces of salmon fillet (180 g each);
- - 1 tbsp. a spoonful of fried sesame seeds;
- - fresh ginger, ground coriander;
- - black peppercorns, vegetable oil, green onions.

Step 1
Bring water and brown sugar to a boil in a saucepan. Add soy sauce, mirin, coriander, ginger, black pepper. Bring to a boil again, reduce heat. Cook for 30-40 minutes over low heat until the glaze volume is reduced by a third. Strain the finished frosting through a sieve and pour into a heatproof bowl.
Step 2
Preheat the oven to 200 degrees. Dry the salmon fillets with paper towels, set aside for now.
Step 3
Heat oil in a heatproof skillet over medium-high heat. Put the salmon in it, fry for a few minutes, then turn over, fry on the other side.
Step 4
Place the dishes with salmon in the preheated oven. Cook for about 15 minutes. Pour the finished fish abundantly with glaze, garnish with sesame seeds, green onions.
