It is necessary

    • For the test:
    • 250 ml warm water
    • 2 teaspoons dry yeast
    • 2 tablespoons warm milk
    • 2 tablespoons olive oil
    • 100 g rye flour
    • 250 g wheat flour
    • a pinch of salt.
    • For the filling: 2 tomatoes
    • 150-200 g "Mozzarella"
    • a pinch of salt
    • basil.

Instructions

Step 1

To make a basic yeast pizza dough, lightly heat the large bowl in which you are going to knead the dough in the oven to keep it warm.

Step 2

Pour 100 ml of warm water into a heated bowl (the water should be warm, but never hot!) And add dry yeast.

Step 3

After the yeast has dissolved, add the rye flour and knead the dough.

Then cover the bowl with a towel or napkin and set it in a warm place for 30 minutes.

Step 4

After 30 minutes, add warm milk, olive oil, salt to the matched dough. Pour in the remaining warm water, add wheat flour and knead the dough.

Sprinkle well-kneaded dough with flour, cover with a napkin or towel and put in a warm place for 2 hours.

Step 5

Sprinkle the table or substrate with flour and roll the dough with a rolling pin into a thin layer.

Step 6

Brush a baking sheet or round pizza dish with olive oil and lightly dust with flour.

After winding the rolled layer on a rolling pin, carefully transfer it to a baking sheet or into a mold.

Step 7

To make the pizza filling, scald the tomatoes with boiling water and peel them off.

Rub the tomatoes through a metal sieve. Drain off excess liquid and salt.

Cut "mozzarella" into slices or grate on a coarse grater.

Tear the basil with your hands.

Step 8

Place the tomato puree made from fresh tomatoes onto the prepared dough. Top with sliced or grated cheese.

Step 9

Place the baking sheet in an oven preheated to 200 degrees. Bake the pizza for 6-8 minutes.

Remove the finished pizza from the oven and sprinkle with basil leaves.
