Fugass is a cake of Provencal origin. Flatbreads differ from other homemade breads in the form of baking, in the form of a leaf. The filling of the flatbread can be different: with olives, with fried onions, with vegetables, anchovies.

- - 250 g flour
- - 10 g granulated sugar
- - 100 g of hard cheese
- - 0.5 tsp salt
- - 1 tsp. yeast
- - 150 ml of water
- - 15 g butter
- - 1 red onion
- - 60 g bacon
- - vegetable oil
Instructions
Step 1
Prepare the dough. Mix water with yeast and let sit for 10-15 minutes. Then add butter, flour, granulated sugar. Knead the dough.
Step 2
Transfer the dough to a bowl, cover with plastic foil and remove to a warm place, it should increase 2-3 times.
Step 3
Cut the red onion into cubes and fry in vegetable oil until translucent. Cut the bacon into chunks and fry until golden brown. Refrigerate onions and bacon. Cut the cheese into cubes. Mix cooled bacon and onion with cheese.
Step 4
Divide the dough into 7 equal pieces, cover with cling film and leave for 10 minutes.
Step 5
Then roll the dough piece into a small circle. Place the filling of cheese, bacon and onion in a circle. Pinch the edges, make a ball. Cover the blanks with cling film and leave for 10-15 minutes.
Step 6
Then roll the blanks with a rolling pin into an oval.
Step 7
Make a cut with a knife.
Step 8
Line a baking sheet with baking paper. Transfer the cakes to a baking sheet, brush them with vegetable oil, salt and pepper.
Step 9
Cover the baking sheet with cling film and let the cakes double in volume. Place the cakes in an oven preheated to 180 degrees and bake for 25-30 minutes.
