Caesar salad is named after its author, an American with Italian roots named Cardini, who runs a small restaurant in Tijuana. By the way, Caesar Cardini learned the special secret of cooking eggs for dressing from his mother.

Main ingredients of Caesar salad dressing

Eggs - for the traditional "Caesar", large chicken eggs (ideally homemade) are used, which should be boiled in barely boiling water for a short time (about a minute) before cooking. Do not forget to pre-prick the shell from the blunt end. However, there is an option of dressing on fully cooked yolks.

Vegetable oil - Extra virgin olive oil is generally preferred.

Worcester Sauce is a fragrant sweet and sour sauce that adds spice to the dressing. You need to add it quite a bit.

2. Wait for the mass to thicken and become homogeneous in structure. Add Worcester sauce, mustard, salt and pepper to taste.

3. Tear a green romano salad or lettuce with your hands and place on plates. Add sliced boiled and lightly fried chicken breast and crunchy wheat croutons. Pour over the sauce and sprinkle with finely grated Parmesan cheese. Serve the salad immediately.

Ingredients:

  • 2 boiled egg yolks
  • 100 ml quality olive oil

  • 5 ml Worcester sauce
