Caesar salad is named after its author, an American with Italian roots named Cardini, who runs a small restaurant in Tijuana. By the way, Caesar Cardini learned the special secret of cooking eggs for dressing from his mother.

Main ingredients of Caesar salad dressing

Eggs - for the traditional "Caesar", large chicken eggs (ideally homemade) are used, which should be boiled in barely boiling water for a short time (about a minute) before cooking. Do not forget to pre-prick the shell from the blunt end. However, there is an option of dressing on fully cooked yolks.

Vegetable oil - Extra virgin olive oil is generally preferred.

Worcester Sauce is a fragrant sweet and sour sauce that adds spice to the dressing. You need to add it quite a bit.

Mustard - This ingredient is not found in the classic Caesar salad, but mustard is present in many modern versions of the recipe. Mild mustard with a sweet aftertaste is ideal for zapraki.

Ingredients:

  • 1 raw chicken egg
  • 100 ml quality olive oil
  • 1 tbsp. a spoonful of freshly squeezed lemon juice
  • 1 teaspoon Worcester sauce
  • 1 teaspoon of liquid honey
  • 1 teaspoon sweet mustard
  • salt pepper

Recipe step by step:

1. Thoroughly wash the egg, break it into a deep bowl. Add freshly squeezed lemon juice and honey. Whisk with a mixer on low speed, gently adding olive oil in a thin stream.

2. Wait for the mass to thicken and become homogeneous in structure. Add Worcester sauce, mustard, salt and pepper to taste.

3. Tear a green romano salad or lettuce with your hands and place on plates. Add sliced boiled and lightly fried chicken breast and crunchy wheat croutons. Pour over the sauce and sprinkle with finely grated Parmesan cheese. Serve the salad immediately.

Tip: you can add a little dried garlic to the ingredients of the dressing - for extra piquancy.

Ingredients:

  • 2 boiled egg yolks
  • 100 ml quality olive oil
  • 2 teaspoons sweet mustard
  • 1 clove of garlic
  • 2 tbsp. tablespoons of freshly squeezed lemon juice
  • 1 tsp 6% tablespoon vinegar
  • salt pepper

Recipe in stages:

one. Mash boiled yolks with sweet mustard, add chopped garlic and stir.

Ingredients:

  • 1 raw chicken egg
  • 40 ml vegetable oil
  • 20 ml olive oil
  • 0.2 tsp mustard
  • 0.2 tsp Worcester sauce
  • 1 teaspoon lemon juice
  • 2 anchovies
  • salt pepper

Recipe in stages:

1. Whisk an egg into a bowl and whisk lightly, then add mustard, fresh lemon juice, olive oil and vegetable oil, Worcester sauce, chopped anchovies, and spices. Stir the sauce thoroughly until smooth.

Ingredients:

  • 1 chicken egg
  • 50 ml olive oil
  • 5 ml Worcester sauce
  • 1 clove of garlic
  • 1/4 lemon juice
  • salt pepper

Cooking step by step:

1. Thoroughly wash the egg, pierce it from the blunt side with a needle, cook for 40-50 seconds in barely boiling water. Beat the egg into a bowl and rub.

2. Peel a clove of garlic and pass through a garlic press, add to the egg and stir.

3. Add freshly squeezed lemon juice and olive oil, then Worcestershire sauce and seasonings to taste. Beat with a whisk or on a slow mixer until a thick, homogeneous mixture is obtained.

Ingredients:

  • 200 ml homemade mayonnaise
  • 20 ml soy sauce
  • 1/2 lemon juice
