Lamb baked with vegetables is one of the classic dishes of Caucasian cuisine. A hearty dish with a specific aroma is perfect for noisy Sunday get-togethers with friends on the backyard.

It is necessary

    • 1 kg of lamb;
    • 200 g of onions;
    • 250 g zucchini;
    • 250 g eggplant;
    • 250 g of tomatoes;
    • 200 g bell pepper (preferably in different colors);
    • 2-3 cloves of garlic;
    • 3 tbsp vegetable oil;
    • 5-6 sprigs of thyme;
    • salt
    • spices
    • pepper.

Instructions

Step 1

Rinse young lamb in cold running water. Pat dry with a paper towel. Remove tendons and films. Cut off almost all the fat, leaving a little so that when baked, the meat turns out to be soft and juicy. Please note that the fat should be white and wax-like in appearance. Cut the meat into chunks.

Step 2

In a bowl, combine the vegetable oil (preferably olive oil) thyme, crushed garlic, salt and pepper mixture. Grate pieces of lamb with the resulting marinade and leave to marinate. Ideally, you need to marinate meat for about 10 hours, but if you do not have such a margin of time, limit yourself to at least 1-2 hours.

Step 3

Peel the onions. Wash all vegetables in running water. Chop the onion in half rings, tomatoes and zucchini - in small pieces, eggplant and bell pepper - in medium-sized cubes.

Step 4

Combine chopped vegetables in a bowl. Add salt and spices. Stir and place in a baking sleeve. Lay the marinated meat on top.

Step 5

Put the prepared sleeve in a fireproof dish and bake in a preheated oven for 80-90 minutes at 180 ° C.
