It is necessary

    • 200 g of round grain rice;
    • 400 g fresh champignons;
    • 150 g bacon;
    • 3 tomatoes;
    • butter for frying;
    • 0.5 glasses of dry white wine;
    • 1 onion;
    • 0
    • 25 glasses of cream;
    • dried oregano and basil;
    • 100 g parmesan;
    • 1 tablespoon flour;
    • fresh herbs of basil and parsley;
    • salt;
    • freshly ground black pepper.

Instructions

Step 1

Prepare a side dish. Round grain rice (for example, Krasnodar), sort out and rinse in cold water. Place it in a saucepan. Pour in double the water, add salt and cook until soft. Properly cooked rice should remain sticky so the ring will hold its shape better.

Step 2

Wash the mushrooms, dry with a towel and cut into plastics. Place them in a bowl and drizzle lightly with lemon juice. Cut the bacon into thin strips and fry in a pan for about 3 minutes. Put the mushrooms in the pan, stir and fry for another three minutes.

Step 3

Scald the tomatoes with boiling water, remove the skin, finely chop the pulp. Pour the tomato slices into the pan and stir. Pour in half a glass of white wine, add dried oregano and basil. Simmer the mixture until the liquid has evaporated by two thirds. Pour in a quarter cup of cream, stir and heat the mixture for another 5 minutes. Add salt and freshly ground black pepper. If the sauce is too runny, thicken it by adding a spoonful of flour. Rub the mixture thoroughly to avoid clumping.

Step 4

Chop the onion in half rings and fry it in a skillet with preheated butter until golden brown. Put boiled rice in a frying pan, mix well and simmer for 3-5 minutes. Use a silicone or metal muffin tin with a notch in the middle. Brush it with butter and fill with the onion and rice mixture. Tamp the rice mass firmly with a large, flat spoon. Place the mold in a preheated oven for a few minutes.

Step 5

Take a large flat dish. Remove the pan from the oven and gently flip the rice ring onto the platter. Place the mushrooms in the tomato sauce in the middle. Sprinkle them on top with pre-grated Parmesan. Garnish the rice ring with fresh parsley and basil and sprinkle pink peppercorns nearby. Serve hot with green salad and chilled rosé wine.
