Step 1
Carefully separate the whites from the yolks. Add a pinch of salt to the egg whites and beat until fluffy and firm. Add sugar to the yolks, beat with a mixer, gradually adding sour cream, softened butter, cocoa powder and slaked soda.

Put the whipped egg whites into the yolk mass and gently mix everything from bottom to top into a homogeneous mass. Gradually add the sifted flour to the resulting mixture. Mix thoroughly.

Line a baking sheet with a sheet of parchment paper. Lightly brush it with butter and spread out the dough. Spoon the dough evenly over the parchment and flatten.

Bake in a preheated oven for about 25-30 minutes at 190-200 ° C.

To prepare the cream, beat the sour cream with sugar with a mixer. Chop the nuts and add to the resulting mass. Whisk until smooth.
Step 6
When the roll dough is baked, remove it from the oven and gently spread the sour cream and hazelnut cream over the entire surface. Roll the dough quickly into a roll, using the parchment to help yourself. Leave the roll as it is until it cools completely, without removing the parchment paper.

To prepare the frosting, combine the sugar and cocoa powder in a saucepan. Pour water into the resulting mixture and, stirring continuously, bring to a boil. Heat the frosting for 1-2 minutes over low heat.
Step 8
Pour the cocoa icing over the cooled roll. For decoration, you can use cream and fresh berries of cranberries, blueberries, currants or others.
