Step 1

Beat raw chicken eggs together with egg yolks and granulated sugar, preferably with a whisk, until the consistency of this mixture becomes homogeneous. As soon as this happens, place the cookware with the resulting mass in a pot of boiling water. While heating it in a water bath, do not stop beating until foam forms.

Step 2

Divide freshly squeezed lemon juice into 3 equal parts, add one of them to the foamy mass and cook, whisking continuously, for 60 seconds. Do the same with the remaining lemon juice, that is, as a result, you will perform this procedure 3 times.

Step 3

After you add the last portion of freshly squeezed lemon juice, keep the mixture, without stopping to beat, in a water bath for another 7-8 minutes. When this mass heats up to a temperature of 75 degrees, that is, to a sufficiently hot state, remove it from the stove, mix it with butter. Mix everything so that you end up with a cream with a uniform consistency.

Step 4

After peeling the peels from the oranges, divide them into wedges. Remove the film from each wedge and place them in equal quantities in prepared bowls or glass glasses. When the cream has cooled slightly, pour it over this bowl. Citrus sabayon is ready! By the way, this dessert can also be served with grapefruit.
