You will definitely love pork rolls with dried tomatoes wrapped in Parma ham and drizzled with gorgonzola sauce. They are baked in the oven. The meat is served with homemade oven-baked potato chips and a light salad.

It is necessary

  • For 4 servings:
  • - olive oil - 3 tablespoons;
  • - Gorgonzola cheese - 70 g;
  • - dried ham (Parma or Serrano) - 200 g;
  • - dried tomatoes - 10 pcs;
  • - ground black pepper;
  • - salt;
  • - pork tenderloin - 500 g;
  • - garlic - 1 clove.
  • For the sauce:
  • - Gorgonzola cheese - 130 g;
  • - butter - 1 tablespoon;
  • - cognac - 20 ml.

Instructions

Step 1

Peel the pork tenderloin from the fibers, cut across into 1 centimeter thick pieces. Make a soft fillet out of the pieces, beating them lightly. Sprinkle with fresh ground pepper and salt (one pinch of salt and one pinch of pepper). Preheat oven to 200oC.

Step 2

On each fillet, place one small piece of dried tomato, a piece of Italian gorgonzola cheese. Wrap the fillet pieces in Parma ham and brush with olive oil.

Step 3

Place the prepared rolls on a baking sheet, pre-lined with foil in one or two layers. You can use baking paper instead of foil. Place the baking sheet with the rolls in the oven and bake for 15 minutes. During this time, the meat should be baked inside.

Step 4

While the pork rolls are cooking, make a sauce with leftover gorgonzola. Melt the butter in a frying pan, pour in the cognac and lightly light it. Next, remove the pan from the heat and place the pieces of gorgonzola on its surface. Stir, melting the pieces.

Step 5

Serve ready-made pork rolls to the table along with a salad of tomatoes, cucumbers, onions, garlic, radishes. Separately, you can also serve arugula, sauce and sliced white and black bread.
