Step 1
Take a whole chicken weighing at least 2 kilograms. Divide it into portions, wash and pat dry with paper towels. Pour 3 tablespoons of olive oil into a hot skillet and fry as many chicken pieces in it as will fit. You need to fry over medium heat for about 10 minutes, constantly turning the pieces so that they are fried as evenly as possible. Then add some more oil and fry the next batch. Place the cooked chicken on napkins to drain off excess fat.
Step 2
Chop 150 grams of green onions. Peel the champignons in the amount of 200 grams, rinse and chop not very finely. Peel three medium carrots and cut into thin slices. Cut 150 grams of bacon into small pieces. Chop 4 cloves of garlic as small as possible. Using a grater, remove the zest from one lemon and measure out 20 grams, the remaining zest is not needed. Put the oven to warm up and set the temperature to 220 ° C.
Step 3
In the pan where the chicken was fried, add another 50 grams of olive oil, add 2 tablespoons of wheat flour and fry, breaking the lumps. Once the flour is golden, add the bacon slices, carrot circles, and onions. Saute until vegetables are tender. Remember to stir to prevent scorching. Transfer the mushrooms and chicken to the skillet and cook for another 5 minutes.
Step 4
Transfer all the prepared ingredients to a glass dish and pour over one glass of chicken broth, the same amount of dry red wine and 2 tablespoons of brandy. Then add minced garlic, lemon zest and 1 teaspoon of cumin. Season everything with salt and pepper, stir, cover and place in the oven. After 15 minutes, taste the dish and add more salt and pepper if necessary. The oven can be turned off after 5 minutes.
