Delicate yet hearty rabbit pie can be made for dinner or as a snack. This dish is perfect for those who do not like to eat too fatty foods, because rabbit meat is considered dietary meat.
It is necessary
- For the test:
- - 1 glass of flour;
- - 150 g margarine;
- - a pinch of salt;
- - 100 ml of ice water.
- For filling:
- - rabbit;
- - the head of an onion;
- - 200 g of bacon;
- - 500 ml of chicken broth or boiled water;
- - a sprig of thyme;
- - 1 bay leaf;
- - salt and black pepper.
Instructions
Step 1
To make the puff pastry, add salt to the flour, then place the margarine pieces and chop them into small crumbs with a knife. Pour in ice water and knead the dough.
Step 2
Collect the resulting crumbling mass into a lump, put on a board and roll out into a layer 5 mm thick. Fold it in an envelope and roll it out again - repeat this several times. Shake off excess flour from the dough, wrap it in cellophane and put it in the refrigerator for half an hour.
Step 3
In the meantime, separate the rabbit meat from the bones and cut into pieces. Fry in a skillet with chopped bacon and onions. Then add broth and spices to them. Simmer for 20 minutes over medium heat.
Step 4
Remove the puff pastry and roll it out again several times. Then divide it into two baking dish-sized layers. Lay one on the bottom, not forgetting to leave the sides.
Step 5
Place the filling on the dough and cover it with the remaining layer, pinching the edges. Make a hole in the center, and notches from the center to the edges. Brush a closed puff pastry pie with an egg and bake in a preheated 180 ° C for about 40 minutes.
