Such a dessert has a bright appearance and a pleasant sweet and sour taste, which is obtained thanks to lemon. It is perfect for a cup of fragrant tea during a family meal or with friends.
It is necessary
- For the test:
- - 100 g of icing sugar;
- - 100 g of butter;
- - 200 g flour;
- - ½ teaspoon of baking powder;
- - an egg;
- - a pinch of salt and vanillin.
- For the cream:
- - 3 lemons;
- - 150 g butter;
- - 3 yolks;
- - 100 g of sugar.
Instructions
Step 1
Beat butter until creamy and add powdered sugar, vanillin and salt to it. Crack the egg and slowly add the flour and baking powder, whisking with a mixer on a slow speed. Knead the dough, wrap it in plastic and refrigerate for 2 hours.
Step 2
Roll out the dough into a thin layer and cut out circles that fit the diameter of the tartlet tins. Spread the dough over the bottom and edges of the molds, trimming off any excess.
Step 3
Pierce the dough a couple of times with a fork. Place in an oven preheated to 180 ° C and bake for 20 minutes until golden brown.
Step 4
Prepare the cream. To do this, grind the sugar with the lemon zest, add the yolks and beat well. Then pour in the lemon juice and stir.
Step 5
Place the bowl of cream in a water bath and cook for about 15 minutes, stirring all the time, until the cream thickens. Cool to room temperature, add butter and beat with a mixer on high speed.
Step 6
Put the finished lemon cream in tartlets and chill them in the refrigerator for half an hour. Serve, garnish with berries and long lemon peel flakes.
