Ice cream tiramisu will surely please all lovers of classic Italian dessert. This delicacy is perfect for a festive dessert in the hot summer season.
It is necessary
- To make Savoyardi cookies:
- - egg whites (180 g);
- - egg yolks (120 g);
- - sugar (165 g);
- - flour (165 g);
- - icing sugar (35 g).
- To prepare the cream:
- - milk (70 ml);
- - whipping cream (200 g);
- - egg yolks (25 g);
- - sugar (25 g);
- - flour (10 g);
- - white chocolate (200 g);
- - mascarpone cheese (250 g);
- - ground coffee;
- - vanilla.
- To prepare the glaze:
- - dark chocolate (100 g);
- - butter (60 g);
- - cocoa powder (30 g).
- Additionally:
- - strong coffee (100 ml);
- - sugar (40 g);
- - wooden sticks for ice cream (5 pcs.).
Instructions
Step 1
First you need to make the Savoyardi cookie dough. To do this, knead a mixture of egg yolks and 65 g of granulated sugar. Beat the egg whites in a separate bowl, gradually adding 100 g of sugar to them. Beat until a thick and fluffy foam forms. Then carefully combine the whipped whites with the yolks, gradually stirring in the sifted wheat flour.
Step 2
Preheat the oven to 200-220 degrees. Cover the baking tray with parchment paper and place 5 wooden ice cream sticks on it at a distance from each other. Using a pastry bag, place the prepared dough so that it covers half the length of the sticks. Sprinkle the cookie dough with plenty of powdered sugar and bake it in a preheated oven for 8-10 minutes.
Step 3
Next, we start preparing the custard. In a small saucepan, mix the egg yolks, sugar, flour and a small amount of vanilla (on the tip of a knife) until a thick, homogeneous mass is obtained. Pour milk into the resulting mixture, add 25 g of cream and put the pan on low heat. Cook the cream until it thickens, stirring it constantly, then remove the custard from heat and cool to 40 degrees.
Step 4
Melt white chocolate in a water bath and combine it with custard. In a separate bowl, whisk 125 g of cream, mix it with mascarpone cheese and a little ground coffee. Gently mix the creamy mass with the chocolate cream.
Step 5
We make strong coffee with sugar and let it cool slightly. Turn the prepared pastry upside down with a stick and saturate it with brewed coffee. Put the prepared custard on top of the cookies, using a pastry bag for this. Then we put the cookies in the freezer for 1, 5-2 hours.
Step 6
Before serving, ice cream should be covered with chocolate icing. To prepare the glaze, melt a bar of dark chocolate and 60 g of butter in a water bath. When the prepared mixture has cooled down a little, we take out the ice cream from the refrigerator and dip it in the chocolate icing, holding it by the stick. Sprinkle tiramisu ice cream on top with cocoa powder and serve.
