Puree soups are dietary meals. They are easy to digest. One serving of pumpkin puree soup contains only 180 kcal. Plus, the soup is delicious and easy to prepare.
It is necessary
- - pumpkin - 500 g;
- - onions (white) - 2 heads;
- - garlic - 1 clove;
- - rye bread - 2 slices;
- - vegetable oil - 2 tbsp. l.;
- - cream 20% - 300 ml;
- - water - 400 ml;
- - turmeric - 0.5 tbsp. l.;
- - fresh ginger - 20 g;
- - salt - 0.5 tsp;
- - ground black pepper - a pinch.
Instructions
Step 1
Rinse the pumpkin, peel and cut into medium-sized cubes. Cut the onion into half rings or large cubes. Rub the ginger on a coarse grater.
Step 2
Cut the pieces of bread into small cubes, dry in the oven to make croutons.
Step 3
Heat the sunflower oil in a deep saucepan. Add grated ginger, turmeric, ground pepper and salt to hot oil. Mix well.
Step 4
Lightly sauté the onions in the spiced oil until golden brown. Add pumpkin cubes to the onion, fry the mixture for another 5-6 minutes. Then add water and cook the soup for 20 minutes.
Step 5
Remove soup from heat and pour in cold cream. Whisk the soup with a blender until smooth. Garnish the soup with croutons and fresh herbs. Fragrant pumpkin puree soup is ready!
