Chippolino onion sauce is ideal for salad dressing. The spicy mixture can be added to fish or meat dishes, or served with croutons.

- - 500 g sour cream
- - 1 tbsp. l. flour
- - salt
- - ground black pepper
- - 70 g butter
- - 600 g of any broth
- - 200 g onions
Instructions
Step 1
Cut the onion into small cubes and fry in butter until golden brown. Add a little flour to thicken the mixture.
Step 2
Pour a small amount of broth into the contents of the pan and mix all the ingredients thoroughly. Fry onions over low heat for several minutes.
Step 3
In a small saucepan, bring the remaining stock to a boil. Add the onion mixture and sour cream to the contents of the saucepan. With constant stirring, bring the mixture to a boil again, add salt and black pepper.
Step 4
Remove the pan from heat, add sour cream to the sauce and cool the mixture. If desired, the ingredients can be chopped with a blender until smooth or whipped with a mixer. The sauce should be like ketchup.
