An incredibly tasty and light dish. In Russia, it gained popularity thanks to the cartoon of the same name. Ratatouille is ideal for a summer table and for the ripening season of vegetables, when they are just about to be plucked from the garden.

It is necessary

  • For the sauce:
  • - 3 onions
  • - bell pepper
  • - chilli
  • - 100 g tomato paste or ketchup
  • - 1 tomato
  • For yourself:
  • - 2 zucchini
  • - 2 eggplants
  • - 5 potatoes
  • - greens (any basil, parsley)
  • - olive oil
  • - salt to taste

Instructions

Step 1

Remove the unwanted seeds from the bell pepper and chop it up. Slice half a chili pepper. Peel the tomato to make it easier to do, cut the skin and soak in water for 10 minutes.

Step 2

Put the peeled chopped onion, tomato and bell pepper, chili pepper and grated carrots on a hot speed. Fry them for 15 minutes. Then add the tomato paste and simmer for another 7 minutes.

Step 3

Put the prepared mass in a deep dish in which you will bake the ratatouille.

Step 4

Slice the zucchini, eggplant, and potatoes into rings. Try to keep them even so that the dish looks great on the outside. To remove the bitterness from eggplant, you can soak it in salted warm water for 10 minutes.

Step 5

Place the chopped vegetables in a baking dish, alternating slices (eggplant, zucchini, potatoes). Chop the herbs. Add it on top of the vegetables and drizzle with olive oil. It is desirable that the oil is not first pressed, otherwise the dish will taste bitter because of it.

Step 6

Cover the mold with foil and place in the oven preheated to 170 degrees. Bake for an hour. After an hour, remove the dish and place on plates. Ratatouille can be served hot or cold.
