One of the traditional dishes of Georgian cuisine is kharcho soup. It takes a long time to prepare it at home, because the soup contains many ingredients. But getting the right products is not a problem now, so you should definitely try this aromatic and spicy dish.
It is necessary
- - chicken - 1 kg;
- - animal fat - 100 g;
- - onions - 1 pc.;
- - walnuts - 50 g;
- - corn flour - 2 tbsp. l.;
- - garlic - 2-3 cloves;
- - tkemali (cherry plum) - 20 g;
- - water - 0.5 liters per serving;
- - suneli hops, saffron, red pepper, cloves - to taste;
- - greens (cilantro, parsley, etc.);
- - salt - 1, 5 tablespoons
Instructions
Step 1
Chop the chicken into 30-gram pieces, cover with cold water and cook until half cooked.
Step 2
Add the fat removed from the broth to finely chopped onions and simmer in a sealed container. Then add the chicken pieces and simmer for 20 minutes. Sprinkle cornmeal over the contents of the skillet and simmer for 5 minutes. Pour in chicken stock and cook.
Step 3
After boiling, add tkemali (cherry plum), crushed cilantro, dill and parsley, crushed garlic, salt and simmer for a few more minutes.
Step 4
Place finely crushed nuts, peppers, cloves, suneli hops and saffron in a saucepan. Kharcho is ready.
