Vegetable puree soup with mushrooms is an excellent dish that can be served for lunch or dinner. The soup is very nutritious and delicious. It does not take a lot of time to prepare it.

- - 10 mushrooms;
- - 5 medium potatoes;
- - 2 carrots;
- - parsley root;
- - celery root;
- - 2 tablespoons of flour;
- - 3 cloves of garlic;
- - 2 onion heads;
- - 2 large spoons of butter;
- - ground red pepper;
- - marjoram;
- - salt;
- - 4 large spoons of lemon juice.
Instructions
Step 1
Cut the mushrooms and cover them with water. Add celery root to a saucepan with mushrooms and put on low heat for 10 minutes. Then remove the mushrooms, strain the broth and bring to a boil.
Step 2
When the broth boils, add the chopped carrots, potatoes, onions, garlic, parsley root, marjoram, salt and red pepper. Cook everything over low heat until tender.
Step 3
Remove the cooked vegetables from the broth and combine with the mushrooms. Rub it all through a sieve or mixer. Dilute the resulting puree a little with broth and place on the stove.
Step 4
Melt the butter in a skillet and fry the flour in it until creamy. Pour 4 tablespoons of vegetable broth into the pan.
Step 5
Pour the resulting sauce into the soup and season with lemon juice. Bring everything to a boil. Let the ready-made soup stand under the closed lid. Vegetable puree soup with mushrooms is ready.
