Fava bean puree is great as a side dish with grilled salmon. The dish turns out to be hearty and light at the same time, while radishes, celery and herbs add freshness.

It is necessary

  • - fillet of salmon 700 g;
  • - fava beans 1/2 kg.;
  • - fresh thyme leaves 2 tablespoons;
  • - olive oil 2 tablespoons;
  • - radish 200 g;
  • - celery stalk 1 pc.;
  • - lemon juice 3 tablespoons;
  • - Dijon mustard 1 tbsp;
  • - chives 1 pc;
  • - fresh parsley, ground black pepper, salt.

Instructions

Step 1

Fava bean puree. Rinse the beans, blanch in salted boiling water, cool and peel. Place the beans and thyme leaves in the bowl of a food processor. Grind, pour in 1/2 teaspoon of olive oil, season with pepper and salt.

Step 2

Cooking the sauce. Combine lemon juice, Dijon mustard and 1 teaspoon of olive oil, stir thoroughly with a whisk. Add chopped chives, salt and pepper. Stir again.

Step 3

Rinse celery, radish and parsley, let dry. Finely chop the parsley. Cut the radish into strips. Finely chop the celery.

Step 4

Cut the salmon into portions, rinse and dry with paper towels. Then drizzle with lemon juice, season with pepper and salt. Leave on for 10 minutes. Grill the fish pieces for 5 minutes on one side only.

Step 5

Place the grilled salmon on the fava bean puree, sprinkle with chopped celery, radish and parsley.
