This delicate sour cream cake gets its name from the combination of light and dark biscuit cakes. Thanks to its original appearance and pleasant taste, it will become an adornment for both a cozy family tea party and a big celebration.

  • For biscuit:
  • - 200 g flour;
  • - 180 g of sugar;
  • - 210 g sour cream;
  • - 2 tsp baking powder;
  • - 75 g of cocoa powder;
  • - 130 g of peeled and chopped nuts.
  • For the cream:
  • - 500 ml sour cream 15 - 25%;
  • - 180 g icing sugar;
  • - 25 g cocoa.
  • For decoration:
  • - 100 g of dark chocolate.

Step 1

Sour cream must be weighed a day before cooking in order to get rid of excess moisture - then you will not have problems whipping the cream.

Step 2

Preheat the oven to 200 degrees and grease the baking dish with butter (or just line it with parchment). We divide the eggs into whites and yolks and put the first ones in the refrigerator. Grind the yolks well with a mixer with half the sugar, add half the sour cream. Sift 100 g of flour with baking powder and add to the liquid ingredients. Knead the dough quickly until smooth, pour into a mold and bake for 20 minutes, cool the resulting biscuit on the wire rack and cut in half.

Step 3

For a dark biscuit, first beat the whites until they reach stable peaks, gradually adding the remaining sugar. Then the second half of the sour cream and sifted with 1 tsp. baking powder and cocoa powder flour. Pour in the nuts, mix gently and bake by analogy with a white biscuit. Also cool on a wire rack and cut into 2 pieces.

Step 4

Beat the sour cream with powdered sugar into a fluffy mass. Separate a third from it and mix with cocoa.

Step 5

Let's start assembling. We start with a dark cake, which we coat with dark cream. Cover with a white cake on top and cover it with white cream. Then dark biscuit and cream again. Finish with a white biscuit and coat the whole cake.

Step 6

Decorate the cake with grated dark chocolate and leave it to soak first for a couple of hours at room temperature, and then for at least 6 hours in the refrigerator.
