Chakhokhbili is a delicious Georgian dish. It was originally made from wild pheasant meat. But over time, the recipe was simplified and they began to use chicken meat. However, this food is gaining more and more popularity. Aromatic tomato sauce with spices, in which chicken is stewed, gives the dish an excellent unique taste.

It is necessary

  • - chicken thighs and / or drumsticks - 1 kg;
  • - onions - 4 pcs.;
  • - garlic - 3 cloves;
  • - tomatoes in their own juice - 1 can;
  • - tomato paste - 1 tbsp. l.;
  • - fresh parsley - 0.5 bunch;
  • - fresh cilantro - 0.5 bunch;
  • - hops-suneli - 1 tsp.
  • - ground black pepper to taste;
  • - salt to taste;
  • - sugar - 0.5 tsp;
  • - vegetable oil for frying;
  • - a deep thick-walled frying pan or cauldron.

Instructions

Step 1

Rinse chicken thighs under running water and pat dry with paper towels. Take a frying pan or cauldron, heat well and lay the chicken. The peculiarity of chakhokhbili is that the meat is fried in its own fat, without the addition of vegetable oil. Stir the thighs frequently during frying so that the skin does not stick to the bottom of the dish. When the chicken has released enough fat, fry it on all sides until golden brown.

In the meantime, open a can of tomatoes, transfer them along with the juice to a separate bowl and crush with a fork. Peel the onions and cut into thin quarter-rings. Take another frying pan, pour 2-3 tablespoons of vegetable oil into it and, when it warms up, put the chopped onion and sauté until golden brown.

Step 3

When the chicken is fried, add the tomatoes and juice to it, stir and simmer for about 5 minutes. Add tomato paste, 0.5 teaspoon sugar and sautéed onion. Cover and simmer for 35-40 minutes at minimum temperature.

Step 4

10 minutes before cooking, peel the garlic and crush through a press or finely chop with a knife. Rinse and chop the parsley and cilantro. After that, put the garlic and herbs in the pan, add the hop-suneli seasoning, black pepper and salt to taste.

Step 5

Chakhokhbili is ready! It can be served immediately with boiled rice, pasta, mashed potatoes or pea porridge.
