Tortelli, ravioli, tortellini - these are the fancy names Italians call dough dishes with various fillings. They very much resemble our dumplings, although they differ in size and shape.
It is necessary
- - 400 g of soft wheat flour
- - water, salt, nutmeg, pepper
- - 5 eggs
- - 400 g soft ricotta
- - 100 g grated parmesan
- - 30 g grated pecorino
- - 200 g grated provolone
- - 230 g green beans
- - 360 g marinara sauce
Instructions
Step 1
Prepare the ravioli first. For the filling, mash 200 g of ricotta in a deep ceramic bowl, add the pre-grated parmesan and pecorino, one egg, nutmeg and pepper. Mix all ingredients well and refrigerate.
Step 2
For the dough, sift 350 g of flour, make a depression in it, add 2 tbsp. water one egg and salt. Knead the elastic dough, kneading until it stops sticking to your hands. Wrap the dough in plastic wrap and refrigerate with the filling.
Step 3
After an hour, remove the dough from the cold and roll out small circles with a diameter of 6-7 cm, from which, adding the cheese filling, mold the ravioli. Cook the finished ravioli in a saucepan with plenty of salted water for 3 minutes.
Step 4
Place beans in a bowl, add 3 tbsp. water and microwave on high power for about 3 minutes. In another bowl, combine 200 g of crumbled ricotta, 100 g of crushed provolone and 30 g of grated Parmesan and stir. Pour a glass of marinara sauce into a baking dish, put a layer of boiled ravioli, spread the cheese mixture and beans on top.
Step 5
Place another layer of ravioli on top of the beans, add 180 ml of marinara and sprinkle with grated Parmesan and provolone. Bake in the oven for a quarter of an hour until the cheese melts and a crispy crust appears.
