  • - 220 g of powdered sugar;
  • - 125 ml of water;
  • - 250 g of almonds;
  • - food colorings;
  • - 230 g of sugar;
  • - 1 tablespoon of almond extract (or 1 teaspoon of almond essence).
  • For decoration:
  • - 300-500 g of green marzipan;
  • - 200 g of colored marzipan (for bears);
  • - caramel hearts;
  • - 2 strawberries;
  • - 4 grapes.

Instructions

Step 1

Prepare marzipan. Blanch the nuts by dipping them in boiling water. Then rinse with cold water, after which the skin will peel off easily. Dry the peeled nuts in the oven at 100 ° C for 10-15 minutes (preferably with the door open). The raw materials must not be allowed to turn yellow or burnt, cool.

Step 2

Pour water into a thick-walled dish, dissolve sugar. Cook to 112 ° C, confectioners call this stage "soft ball". In the absence of a culinary temperature indicator, perform a test with water: drip syrup into a cold liquid, the drop should be elastic and soft.

Step 3

In a coffee grinder or blender, grind the nuts into flour, then stir in the powdered sugar. Pour the cooled syrup over the almond mixture, add the almond extract, beat again. The liquid mixture will thicken and become harder as it cools.

Too dry mastic sprinkle with liquid from a spray bottle (one spoon), mix. Sprinkle with powdered sugar on extremely sticky. For greater elasticity, the mastic should be kneaded by hand. Add green dye to marzipan (for clearing), knead until smooth. Use colored marzipan to make three cubs.

Make syrup. Pour liquid into a saucepan, add sugar, heat over medium heat until sugar is completely dissolved. Remember to stir constantly. Bring the syrup to a boil. Pour the liquor into the cooled syrup, mix.

Step 8

Cut the biscuit into 3 parts, which are well saturated with syrup. Brush the main layer with whipped cream, sprinkle with chopped chocolate. Next, put the next one, treating it with cream. Cover the top with the last crust. Cover the entire cake with lush whipped cream.

Roll the green mastic into a layer. Carefully cover the pastry with a green circle, press it well against the sides of the pastry.
