Pumpkin with pine nuts creates an interesting flavor combination that is perfect for a warm salad. Cooking such a salad will not take you much time; you can serve it both for the festive table and for an ordinary family dinner. Be sure to use butter in this recipe, thanks to which the pumpkin will become softer and will acquire a golden brown crust during cooking.
It is necessary
- For two servings:
- - 400 g pumpkin;
- - 100 g of curd cheese;
- - 2 tbsp. spoons of pine nuts;
- - 2 tbsp. tablespoons of butter;
- - 2 tbsp. tablespoons of olive oil;
- - 1 bunch of arugula;
- - a pinch of dried oregano;
- - black pepper, salt.
Instructions
Step 1
First, peel the pumpkin, remove all seeds, cut the pulp into small pieces.

Line a baking sheet with baking paper.

Lay out the pumpkin, salt and pepper, sprinkle with dried oregano, drizzle with olive oil. Add the pieces of butter.

Bake for 15 minutes at 200 ° C. Cooking can take less time depending on your oven.

Place arugula leaves, warm pumpkin, and curd cheese on portioned plates.
