Hot dishes for special occasions are prepared not only tasty, but also impressive on the table. It can be whole baked duck with apples or goose. Such a hot dish will add special importance to the festive table. Perfect for a celebration and chicken fillet baked with mushrooms and prunes.
Honey duck stuffed with apples and raisins
The following ingredients are required for cooking:
- duck - 1.5 kg;
- green apples - 800 g;
- basil - ½ tsp;
- natural honey - 2 tbsp. spoons;
- raisins - 200-250 g;
- turmeric - ½ teaspoon;
- ground black pepper - 1/3 tsp;
- olive oil - 50 ml;
- salt to taste.
Gutted duck carcass must be thoroughly washed, dried with a napkin and rubbed well with a mixture of salt, pepper and turmeric inside and outside the carcass. Then place the duck in an enamel container and leave to soak in the spices for about an hour.
Green apples (not sweet) should be washed, cut into slices, after removing the core. Rinse raisins and mix with apple slices. Stuff the duck carcass with apples and raisins and chop the belly with wooden skewers (or sew up the carcass with threads).
Natural honey should be mixed with rosemary and a little olive oil and grease the surface of the duck carcass with this composition. Place the duck on a deep baking sheet and bake in the oven for 1, 5-2 hours. As soon as the crust is browned, cover the carcass with foil on top so that it does not burn. From time to time it is necessary to water the duck during baking with the remains of honey sauce and melted fat. Free the finished duck from skewers or threads, put on a festive dish, take out the apples with raisins and arrange them around the duck.
Chicken with mushrooms and prunes
To prepare this dish, you will need the following ingredients:
- chicken fillet - 1 kg;
- champignons - 200 g;
- mustard - 7 g;
- olive oil - 30 g;
- prunes - 10-15 pcs.;
- Parmesan cheese - 150 g;
- soy sauce - 50 ml;
- shallots - 1 pc.;
- sour cream - 200 g;
- honey - 15 g;
- salt to taste.
The chicken fillet should be rinsed, deep pocket-shaped cuts made in the meat and placed in the marinade. To prepare the marinade, you need to mix the soy sauce with honey, salt and mustard in a bowl, mix the composition thoroughly until the honey is completely dissolved and, having coated the chicken fillet with this mixture, leave the meat in the bowl with the marinade for 20 minutes.
The prunes must first be poured with hot water and left to swell for a while. Next, you should cut the prunes in half and remove the bone from it. The shallots should be peeled, rinsed with cold water and cut into strips. The champignons should be wiped with a napkin, cut into thin slices and the mushrooms should be sautéed with shallots in olive oil.
Parmesan cheese needs to be grated. Now you can start preparing the baking sheet, for this you should grease it with olive oil. And only after that it will be possible to put the marinated chicken fillet on a baking sheet, in the cuts of which the fried mushrooms should be placed. Then put halves of prunes and onion straws on top of the meat. And only after that it will be possible to pour over sour cream and sprinkle generously with grated Parmesan.
The baking sheet with chicken fillet must be placed in the oven, which must be heated to 180 ° C. Bake the dish for 35-40 minutes. Skewers should be removed from the finished fillet and put on a large dish.
