It is necessary

10 kg of grapes, glass bottles for 10 liters, grape sourdough

Instructions

Step 1

To make dry wine, you need sweet grapes, the sweeter the berries, the stronger the wine will be in the end. If you use sour grapes, be sure to add sugar, otherwise the drink will mold and spoil. The best grape varieties for making wine are Muscat, Lydia, Aligote. Prepare your grapes. Wash it thoroughly, pick the berries from the bunches, selecting and throwing away the rotten and spoiled ones.

Step 2

Mash the cooked grapes with your hands). Place the resulting juice and pulp (cake) in a container, close the top with gauze or other light "breathable" cloth. Leave the balloon in a warm place for 2-3 days. Fermentation will begin without assistance, but for best results it is advisable to add wine yeast. On the third day of fermentation, the pulp will float to the surface.

Step 3

After waiting another week after lifting the cake from the bottom, drain the juice from the bottle into another (clean) one, wringing out the pulp with your hands.

Step 4

Place a water seal and leave the bottle to ferment for 2-3 weeks. The liquid should be cloudy (this is the effect of yeast). The end of the fermentation process can be determined by the following factor: gas evolution stops, the yeast goes down, and the wine becomes more transparent).

Step 5

Pour the wine back into a clean bottle and put the water seal back on. Send the wine to a cool place for at least 2 months (the temperature should be between 8-12 degrees). At this time, tartaric acid will begin to crystallize and settle on the walls of the cylinder. The acidity of the drink will decrease and it will become clear.

Step 6

Pour the finished wine into bottles so that the liquid level reaches about the middle of the neck. Cap and store in a cool place. Young wine tastes somewhat rough, so it is worth waiting a couple of months before drinking it.
