Not only original sauces, but also drinks, preserves and even desserts can be prepared from rowan fruits. They turn out to be fragrant, very tasty and incredibly healthy.
Rowan jam
Most often, jam is made from mountain ash. To do it, you need the following:
- mountain ash - 2 g;
- sugar - 1.5 kg;
- water - 700 ml;
- apples - 500 g.
Take a rowan tree, detach it from the branches, transfer it to a sieve and rinse thoroughly under running water. Take a saucepan and add sugar to it. Fill it with water and place it on the hotplate. When the mixture boils, you need to reduce the heat and stir constantly. It is necessary that the sugar and water boil down and get a syrup of medium thickness.
Take apples and cut into small slices. Dip them in the syrup and then add the mountain ash. Cover it all with a lid and let sit for 10 hours. After this time, put the jam on the fire, bring to a boil and cook for 3 minutes. Then you can start twisting it into jars.
Sweet mountain ash sauce
This berry sauce is a great addition to many dishes. To do it you need:
- sugar - 200 g;
- mountain ash - 1 kg;
- water - 50 ml;
- sweet bell pepper - 2 pcs.
Take a mountain ash, remove the twigs from it and put it in boiling water for 1 minute. Then mince the berries with the bell pepper. Pour all of this with water, put on fire and bring to a boil. Pour sugar in there and place everything carefully. Reduce heat slightly and let sauce stand until thick. After which it will be ready for use.
Rowan liqueur
Rowan filling has a tart taste. To do it, you need to take:
- mountain ash - 1.5 kg;
- vodka - 2 l;
- sugar - 1 kg.
Take a ripe mountain ash, rinse, remove the twigs and pat dry on a kitchen towel. Preheat the oven to 180 ° C and put the berry on for 2-4 minutes. It should become soft.
Cool the mountain ash and pour into the pre-prepared bottles. Pour it 2/3 with purified vodka. Leave to infuse for several weeks. It is necessary for the berry to become dark amber in color. Then drain the vodka, and cover the mountain ash with sugar. Place bottles in a dark place for 2 weeks. After this time, the filling will be ready.
Rowan candied fruits
Rowan berries produce delicious candied fruits that taste pleasantly bitter. To make them, you must:
- granulated sugar - 1, 2 kg;
- mountain ash - 1 kg;
- citric acid - 3 g;
- water - 3 tbsp.
Take rowan berries and dip in boiling water for 5 minutes. Then transfer them directly to cold liquid for the same time, and then remove them on a paper towel.
Place a pot of water and bring to a boil. Pour sugar into it and prepare syrup. Put the fruits in it and keep on fire for 4-5 minutes. Then leave it all for a day. Then bring the pan with mountain ash to a boil again and add citric acid there. Throw the berries in a colander, let the syrup drain, and put the finished candied fruits on a dish.
