This juicy and light dish made from fresh herbs and fish meat can give the body energy and please with a bright look. It is necessary

  • - salt - to taste;
  • - ground black pepper - to taste;
  • - honey - 1 tsp;
  • - lemon juice - 1 tablespoon;
  • - olive oil - 3 tablespoons;
  • - cherry tomatoes - 6 pcs;
  • - quail egg - 6 pcs;
  • - long cucumber - half;
  • - fresh herbs (beet leaves and iceberg) - 200 g;
  • - boiled salmon fillet - 1 pc.

Instructions

Step 1

If you have a whole fish, you need to prepare it. Cut off the head, tail, fins, remove the entrails, bones, peel off the scales. Rinse the fish in water and cut into pieces with a knife.

Step 2

Place pieces of salmon fillet in a saucepan, fill with water so that the water level is 5 centimeters higher than the fish. You can add seasonings to your liking. Salt the water lightly and let it boil. Simmer for 7 minutes and turn off heat.

Step 3

Pour olive oil and lemon juice into a bowl. Add pepper, salt, honey and beat gently with a whisk or two forks. Make the mass homogeneous.

Step 4

Chop the iceberg leaves and place them in a deep bowl. Add beet leaves and cucumber, peeled and chopped. Drizzle over all of this with a freshly prepared homogeneous dressing and stir.

Step 5

Cut the boiled quail eggs into halves. Cut the tomatoes into pieces. It is better to choose their denser varieties. Cut the boiled salmon fillet into pieces.

Step 6

Transfer everything to the rest of the ingredients. Pour the leftover sauce over the salad and serve as an independent dish or along with boiled potatoes, rice, peas, buckwheat, sour cream, ketchup and slices of white or black bread.
