Pancakes, pancakes! In childhood, our mothers and grandmothers fried them for us, then we cooked them for our children, and now we pamper our grandchildren. Who does not like hot, hot, hot, cakes! They are eaten with sour cream, jam, honey, and condensed milk. And the dough can be different: with apples or zucchini, cottage cheese or cheese, potatoes or mushrooms. There are many options. The basic pancake dough can be yeast or quick.

- For yeast dough:
- 3 cups flour
- 2 glasses of water or milk
- 2 tablespoons sugar
- 25 g yeast
- 1 tablespoon refined vegetable oil

- For a quick test:
- 1.5 cups flour
- 0.5 l of kefir
- 2 eggs
- 1-2 tablespoons of sugar
- 1 tablespoon refined vegetable oil
- 0.5 teaspoon of salt and soda
- a tablespoon of 6% vinegar.
- For semolina pancakes:
- 1 cup semolina
- 1.5 cups milk
- 5 eggs
- 1 tablespoon sugar
- 1 tablespoon refined vegetable oil
- salt.
- For oat pancakes:
- 1 cup oatmeal
- 2 glasses of water
- 2 eggs,
- 1 tablespoon sugar
- 1 tablespoon refined vegetable oil
- salt.
- For roasting:
- 100 g of refined vegetable oil.
Instructions
Step 1
Yeast dough.
Dissolve yeast in warm water or milk, add flour and knead.
Let the dough rise in a warm place. Then add sugar, salt and vegetable oil, knead, let rise again. Without stirring, take the dough with a spoon, place in a hot pan with butter and fry the pancakes on both sides.
Step 2
Fast dough.
Break eggs into a bowl, add sugar, salt, mix. Pour in half a portion of kefir, add soda (extinguish in vinegar), vegetable oil, flour and mix all the ingredients with a whisk. Gradually add the remaining kefir to the resulting thick dough, stirring constantly so that no lumps form.
The resulting dough is light, creamy, close in consistency to thick sour cream. Pour the pancakes with a tablespoon into a hot frying pan with a little vegetable oil and fry on both sides.
Step 3
Semolina pancakes.
Boil semolina porridge in milk, cool, add yolks, salt, sugar and a spoonful of vegetable oil one by one. Beat all ingredients thoroughly, then add whipped egg whites. Stir the dough from top to bottom and bake the pancakes with a spoon on a hot, oiled frying pan. Fry pancakes on both sides.
Oat pancakes.
Boil oatmeal in water, cool, add salt, sugar, yolks, vegetable oil. Mix everything well. Then add the whites whipped into a stable foam, gently mix from top to bottom. Bake the pancakes in oil, spooning them into a hot skillet. Fry until browned. Lean oatmeal pancakes can be made without adding eggs.
Serve the pancakes with sugar, honey, jam, jam or cottage cheese with sour cream and sugar.
