Butterflies are mushrooms that usually grow in coniferous forests and prefer sunny and well-warmed places. When boiling these mushrooms, it is necessary to take into account some of their features.

Step 1
Butterlets are very often wormy, so you need to pay attention to this when collecting them in the first place. Do not take overgrown mushrooms. It is better to give preference to medium-sized butters, strong and clean.
Step 2
Peel the mushrooms thoroughly. Pay special attention to the processing of oil, since their cap is covered with a sticky film, to which dirt and dry leaves adhere very well. In addition, the oil caps have a film on the underside that must be removed. If you do not remove it and boil the mushrooms with it, the boletus will have a bitter taste, and the film itself will become hard. When cleaning these mushrooms, periodically rinse the knife in cold water.
Step 3
After cleaning the mushrooms, rinse them thoroughly. To do this, put them in a colander and place them under running water. Stir occasionally. Thanks to this, the remains of small debris and mucus are removed from the mushrooms.
Step 4
Cut the butter into small pieces (plates or cubes) with a sharp knife. The smaller the pieces are, the easier the mushrooms will be absorbed by the body. Place in a saucepan, cover with cold water and put on low heat. As soon as the water boils, boil them for another 15-20 minutes. Remove the butter foam formed during cooking with a spoon or slotted spoon. Remove mushrooms from heat, put in a colander and rinse with cold water. Leave to allow the water to drain completely. After that, you can start preparing dishes from these mushrooms.
Step 5
Heat some vegetable oil in a frying pan and fry finely chopped onions and carrots grated on a coarse grater in it until golden brown. Put the boiled butter oil on the onion and fry until excess moisture is removed from them. Season with salt, pepper and stir. Leave covered for 10-15 minutes. Serve hot fried boletus with sour cream, fried potatoes or fried meat.
