I offer you an excellent recipe for baked eggplant. The dish can be eaten even by those who are fasting. It is a great vegetable addition to your diet.

- To prepare baked eggplant you will need:
- • 2 medium sized eggplants,
- • 250 grams of tomatoes in their own juice,
- • salt - to taste,
- • olive oil to taste,
- • 1 tbsp. a spoonful of dried oregano,
- • 1 tbsp. a spoonful of dried celery.
Instructions
Step 1
First, cut the eggplants into slices 0.7-1 cm thick, then divide each circle into 4 parts. Next, fill the eggplants with cold salted water and leave for 15-30 minutes so that bitterness comes out of them.
Step 2
After 15-30 minutes, drain the water, rinse the eggplants, put in a baking dish, sprinkle with olive oil, salt and bake in an oven preheated to 200 degrees. The dish is prepared for about 40 minutes. Sometimes we take the eggplants out of the oven and stir them so that the vegetables are baked evenly.
Step 3
We make tomato dressing: peel the tomatoes from the jar, add a little tomato juice and grind them in puree. Pepper the tomatoes, salt, mix.
Step 4
After 40 minutes, remove the eggplant from the oven, fill it with dressing, mix and bake for another 15 minutes at 200 degrees.
