Step 1
All kvass are currently divided into two groups: blended and fermented. Of course, only representatives of the second group can be attributed to real kvass, since they are the “living” ones. A good kvass should contain yeast and lactic acid bacteria, which allow the drink to constantly be in a state of fermentation. These microorganisms give kvass its usual taste, making it useful. Be sure to pay attention to the composition of the drink; real kvass must contain yeast.
Step 2
Blended kvass does not ferment, since it is made from a specially prepared kvass concentrate, with the addition of citric acid, flavorings and other ingredients. Blended kvass can be made from natural products, but even in this case it is very far from "live" kvass.
Step 3
Always pay attention to the expiration date. The smaller it is, the more correct the kvass. Ideally, kvass should not be stored longer than a day, so it is best to buy it in bulk. During the day, the sugar has time to ferment, as a result, only acid remains in the drink, and the kvass turns sour. Producers of bottled kvass extend its shelf life through pasteurization and filtration, this must be indicated on the label. After such processing, kvass loses most of its useful qualities, but it is stored longer, so you can buy it for future use. But even taking into account such processing, good kvass should not be stored for more than two months.

If the label states that you have a kvass drink in front of you, you should refuse to purchase. Kvass drinks are called kvass-flavored soda. In the composition of such drinks, you can find a huge number of flavors, dyes, sweeteners, acidity regulators. Sodium benzoate is often used by manufacturers of kvass drinks, which can cause severe allergic reactions.
Step 5
You should not buy kvass marked "highly carbonated". This indicates that the bubbles in the drink appeared due to the artificial introduction of carbon dioxide, and not as a result of natural fermentation. In principle, this does not affect the taste of the drink, but if you see such a mark on the bottle, carefully study the label for flavors and colors. However, if they are not there, you can safely buy such kvass.
Step 6
The price of kvass should not be too low, the extraordinary cheapness of the drink does not definitely indicate high quality. A good kvass is several times more expensive than a variety of kvass drinks.
