This apricot liqueur tastes very good. Many chefs use it to soak biscuit cakes and various desserts. This liqueur is one of the ingredients of the original cake with the same name "Abrikotin".
It is necessary
- -apricots - 0.5 kg,
- - sugar - 3 kg,
- -quality vodka - 3 l,
- - purified water - 2 l.
Instructions
Step 1
We wash the apricots. Freeing fruits from seeds. Transfer the apricots to a blender and grind until smooth.
Step 2
For liquor, you need to use spring water. But if it is not there, then you need to defend ordinary water for six hours, and then clean it with a filter.
Step 3
We extract the kernels from the apricot kernels, which we grind. For liqueur, we need no more than half of the crushed seeds, since a large amount will add bitterness to the drink.
Step 4
Pour water into a large saucepan (about 8 liters) and add sugar. Cook the syrup with stirring until the sugar dissolves. Remove the foam when preparing the syrup.
Step 5
Mix the apricot puree with the crushed kernels, transfer to the finished syrup, mix and boil for ten minutes over low heat.
Step 6
Cool the sweet mass to room temperature, add vodka and stir. Pour the liquor into bottles or cans, seal it tightly and put in a warm place for a month. Shake the liquor periodically.
Step 7
After a month we take out the liquor and filter it through two or three layers of gauze. Pour the filtered liqueur into clean bottles, close with lids and put in a warm place for another 14 days.
