- 1 ½ cups of wheat flour;

- 1 egg;

- ¼ glass of water;

Sift the wheat flour through a sieve, combine with a little salt and form a slide from the resulting mixture. Make a small depression, beat an egg into it and gradually pour in cold boiled water. Mix everything well and knead the tough dough. Form a bun out of it, put in a bowl and, covered with a damp cloth, leave for half an hour.

At this time, prepare the minced meat for the dumplings.

How to cook minced meat for Ural-style dumplings

To prepare minced meat you will need:

- 200 g of pork;

- 200 g of beef;

- 1-2 large onions;

- 2-3 cloves of garlic;

- 1 tbsp. l. butter;

- 2-3 tbsp. l. milk;

- ground black pepper;

- salt.

Rinse the beef and pork thoroughly under running water, pat dry with a paper towel and cut into small pieces. Peel the onions and garlic cloves. Pass the meat along with the onions through a meat grinder a couple of times. Add the minced garlic cloves, a tablespoon of softened butter, salt and pepper. For softness and tenderness of the minced meat, pour in a little milk, but do not overdo it - it should not be liquid. Mix everything well.

Roll out the dough into a thin layer, cut out circles from it with a notch or glass and place in the center of each small ball of cooked minced meat. Pinch the edges of the dough circles, giving them the shape of dumplings.

Pour cold water into a saucepan, place over medium heat and bring to a boil. Then add some salt, add a few peppercorns, a couple of bay leaves and lower the cooked dumplings. Reduce heat to low and simmer until simmering until the dumplings float to the surface of the broth, about 10 minutes from the start of the boil. Then catch the dumplings with a slotted spoon, arrange on plates and cover with broth or season with butter, sour cream, mayonnaise or a specially prepared sauce.

How to make Ural-style dumplings sauce

In the Urals, it is customary to serve hot sauce with vinegar for dumplings, for its preparation you will need:

- 3 tbsp. l. vegetable oil;

- 1 tbsp. l. 9% vinegar;

- a mixture of herbs (dill and parsley);

- ground black pepper:

- salt.

Dissolve the salt in vinegar and pour in vegetable oil, add black pepper and about a handful of finely chopped dill and parsley. Mix everything very thoroughly and pour the boiled dumplings with vinegar sauce.
