How to prepare mushrooms

Before salting, mushrooms need to be prepared, cleaned of debris, adhering leaves. It is best to do without water, leaving the mushrooms dry - in this case, they will be salted better and less likely to spoil. Wipe the mushrooms with a soft towel, if they are still wet, dry them. It is better to cut large mushrooms, and small ones can be left intact.

Choose the right crockery, never earthenware or galvanized. Please note that the volume of mushrooms when salted decreases several times. Sprinkle the bottom of the dish with salt, lay a layer of saffron milk caps, legs up. Then sprinkle with salt again and add the mushrooms. Each layer should be no more than 5 cm thick. You will need 50 grams of salt per kilogram of mushrooms.

Salted mushrooms without spices are especially tasty and distinctive, but for a change, you can add some seasonings to taste: bay leaf, black peppercorns, cinnamon.

When all the layers are laid, cover the dishes with clean gauze or cloth, put oppression on top (any heavy object can be used as oppression). To prevent mushrooms from spoiling until next summer, or even until next year, you need to store them correctly. The best place is a basement, a heated basement, a pit or the upper shelves of the refrigerator, where the temperature is between +1 - +7 degrees. Before serving, place the salted mushrooms on a plate, add onions or garlic, sunflower or olive oil, or sour cream to taste.
