Step 1
To prepare he, you can take 3-4 medium-sized herring for a sample. This amount usually weighs 1 kg. However, after cutting off the heads, tails, removing the backbone and skin, 60 percent will remain. To make the fish easier to butcher, there is no need to wait until it is completely defrosted. From the thawed herring, the upper skin with the remnants of the scales strives to be removed along with the pulp.
Step 2
When the fish is finished, the herring fillets are cut into 2 cm wide pieces, which are folded into a deep bowl and salted in moderation. It is important not to overdo it in the first step with salt, as soy sauce is added at the end of cooking, which also adds a salty flavor. In addition to salt, add 70% vinegar essence (2 teaspoons), after which the contents of the bowl are thoroughly mixed, covered and set aside.
Step 3
While the vinegar and salt are doing their job, you can start slicing the onions. You will need 2 large or 3 medium onions, which are cut into thin half rings. If the vegetable is too "angry", then after cutting it can be lightly rinsed. The onion is sent to the fish and a mixture of ground peppers is poured over it to taste. Usually it is black and red hot, ground coriander. All ingredients are mixed.
Step 4
It is not forbidden to add various vegetables to the content, to whom which is more to your taste. As a rule, these are carrots or green margelan radish, slices of fresh cucumber, rings or half rings of bell pepper, cut into thin strips on a special grater. At the very end, soy sauce is poured (1-2 tablespoons). In fact, the preparation of herring heh can be completed at this point, but it is preferable to add to the dish a ready-made dressing for fish heh, which is on sale today.
Step 5
This does not mean that with this dressing, all other hot and spicy ingredients can be omitted. It's just that with it, the dish acquires a richer taste inherent in all Korean salads. Herring as an ingredient for heh is also good because you can eat it only an hour and a half after cooking.
