Sweet biscuits are one of the most popular types of dessert that are equally well suited to a cup of some hot drink (coffee, cocoa or tea), and to a glass of cold dairy product (milk or kefir, fermented baked milk or yogurt).
There are a lot of recipes for this delicacy. And today we offer one of them - this is a very simple (both in terms of the set of ingredients and the method of preparation) semolina cookies.
There is not a single gram of flour in its composition. But in addition to semolina, add a little starch and orange zest to the cookie dough (to give the baked goods a light citrus note).
Ingredients:
- 40 g of sugar sand;
- 40 g of potato starch;
- 40 g ghee (or butter);
- 60 ml whole cow's milk;
- 170 g semolina;
- 1 egg;
- a pinch of fine salt;
- a coffee spoon of vanilla sugar;
- a coffee spoon (as much as possible) crushed to a powder of dried orange peel (or lemon);
- a coffee spoon with a slide of baking powder;
- a handful of small candied fruits.
Complementing the ingredients for semolina cookies in the form of crushed nuts, coconut, chocolate chunks, raisins or poppy seeds will make the baked goods even more appetizing and more varied in taste.
If necessary, animal oil can always be replaced with odorless vegetable oil, and instead of baking powder, use baking soda, reducing the specified amount by half. And if you also replace milk with water, and the egg with a banana, then the cookies will turn out to be lean and truly vegetarian.
The process of making semolina cookies without flour
Break the egg and pour it into a bowl. Pour vanilla and regular sugar there and beat with a whisk until light foam. You can also use a mixer. We melt the oil (the microwave will cope with this task in a matter of seconds).
Pour milk, melted butter into a bowl with sweet egg mass (it should not be hot), add salt. Mix the ingredients.
Now we pour all the semolina together with the orange zest into the liquid mixture and mix well with the same whisk.
We leave the contents of the bowl alone for 10-15 minutes so that the semolina is saturated with moisture and swells.
As soon as the mass thickens a little, pour the rest of the dry ingredients (starch and baking powder) into it. Mix everything thoroughly and wait another 10 minutes.
In the meantime, heat the oven to 180 ° C. We cover the baking sheet with a sheet of parchment, well oiled with any oil. We form cookies from a tender viscous dough (it can have any shape and size) and immediately spread it on parchment at a respectful distance from each other. Press candied fruits on top. We send the baking sheet with the blanks to the oven for 20-23 minutes.
When the semolina cookies are browned until golden brown, take the baking sheet out of the oven and leave it on the table for a couple of minutes.
Then carefully remove the very tender and crumbly biscuits from the parchment and place them on the wire rack and cool them. In the absence of such a device as a lattice, cover the plate or wooden board with paper napkins and put the baked goods on them.
We transfer the already cooled semolina cookies to serving dishes and serve.
