Meat rolls are a kind of lifesaver for cooks. The ingredients are not the most complicated, preparation does not take much time, and the finished dish is suitable not only for everyday meals, but also to decorate the festive table. For meat lovers, it will not be superfluous to learn how to cook beef roll at home.
Filled beef roll: ingredients
To make a beef roll at home, you need to have the simplest products on hand:
- beef fillet - 1 kg;
- a few slices of pickled bell pepper (you can use fresh);
- 150 g of bacon (1 package);
- 2 boiled eggs;
- pitted olives - 10-12 pieces;
- salt to taste.
- 1 onion;
- half a bell pepper;
- 2 medium-sized carrots;
- 2 cloves of garlic;
- Bay leaf;
- a sprig of thyme;
- 2 ripe tomatoes;
- 100 ml of white wine;
- 250 ml of chicken broth;
- vegetable oil;
- salt.
Stuffed Beef Roll: Cooking
To make a beef roll at home, try to cut the meat so that you get an oblong layer of the same thickness, rectangular or oval. Lightly salt the meat, top with bacon, sliced eggs, olives and pepper slices.
Roll up the roll as tightly as possible, tie with twine.
Heat a little oil in a saucepan with a thick bottom, fry the beef roll on all sides until golden brown so that it "seals". Set aside.
Chop the peeled onions, garlic, carrots and peppers (the size of the pieces does not really matter, since the vegetables will later be chopped with a blender). Put the vegetables in the pan where the meat was fried, if necessary, pour in a little sunflower (olive) oil. Add bay leaf and thyme, season with salt to taste, simmer over medium heat for 20 minutes.
Next, you need to pour wine into the pan, put the meat on top, let the alcohol evaporate (2-3 minutes is enough). Remove the peel from the tomatoes, cut, add to the meat, pour in the broth (you can use water), simmer over medium heat for 1, 5 hours.
Remove the meat from the pan and leave until it cools completely, only then remove the twine - in this case, the roll will not fall apart or deform.
Remove the bay leaf and a sprig of thyme from the pan with vegetables, chop the vegetables with a blender. If the consistency of the sauce is thin, it needs to be boiled down a little over medium heat.
Now you know how to cook a beef roll at home, all that remains is to warm it up before serving, cut it beautifully and serve it under warm vegetable sauce. The convenience of the recipe is that stuffed beef roll can be prepared the day before the feast.
