Step 1

To make pancakes, combine kefir, eggs and sugar in a bowl. Beat with a whisk or mixer on low speed. Combine flour, baking powder, salt and baking soda in a sieve. Sift the resulting free-flowing mixture into a bowl of kefir, stirring with a whisk to avoid clumping. Beat the dough thoroughly until a homogeneous consistency is formed, reminiscent of the average between fermented baked milk and sour cream.

If desired, while kneading the dough, add raisins, chopped dried apricots, thawed or fresh blueberries, currants, grated apple. This will give the pancakes an extra interesting flavor and aroma.

Step 3

Pour vegetable oil into the pan for frying. It is advisable to use extra virgin olive oil as it does not form harmful carcinogenic substances during the frying process. Place a skillet over medium heat and heat the oil. Use a tablespoon to spread the dough into the skillet. Fry on one side and turn over at the moment when small bubbles begin to appear and burst on the surface. Put the pancakes fried on both sides on a dish.
