Kufta soup is an excellent Caucasian dish. It will certainly appeal to all men, and it is not so difficult to prepare it. The main thing is to soak the chickpeas in advance (it is better to do this at night) and properly prepare the meatballs.

  • • 400 g of lamb (if you wish, you can replace with beef);
  • • 3 medium sized onions;
  • • 5 potato tubers;
  • • saffron;
  • • 1/3 teaspoon of ground black pepper;
  • • fresh parsley, cilantro and dill;
  • • 2 tablespoons full of rice grits;
  • • half a glass of chickpeas;
  • • 3 ripe medium sized tomatoes;
  • • 2 teaspoons of salt;
  • • 2, 5 liters of broth (bone).

Step 1

Before you start preparing this soup, you need to rinse and soak the chickpeas well in advance. He must stay in water for at least 12 hours.

Step 2

After this time, the water should be drained from the chickpea, and it should be thoroughly rinsed several times. Then the prepared chickpeas must be transferred to a saucepan, into which the bone broth must first be poured. Put everything on a hot stove and wait for the broth to boil.

Step 3

Tomatoes must be thoroughly rinsed and peeled from them; this is quite simple to do. The tomatoes must be scalded with freshly boiled water, after which the skin will easily come off. After the skin has been removed, the tomatoes should be cut into small pieces and added to the saucepan of the soup.

Step 4

After boiling the broth, you need to reduce the heat and cook the soup for about 60 minutes.

Step 5

Rice grits should be washed and put into a small saucepan. Add water to it and cook until half cooked with regular stirring. Drain the remaining liquid from the saucepan and leave the rice to cool.

Add a little saffron to boiling water and wait until it is infused.

Step 6

The husk should be removed from the onion and finely chopped with a sharp knife. Peel the potato tubers and wash them thoroughly. Then the potatoes need to be cut into fairly large pieces.

Step 7

Minced meat must be made using a meat grinder. Then add ½ part of the prepared onion and rice grits to it. Also add some black pepper and salt. Mix everything well. From the minced meat, make large meatballs the size of a large egg.

Step 8

Add potatoes and prepared meatballs to the soup, as well as onions and black pepper. Cook for a quarter of an hour.

Pour the saffron and add the correct amount of salt. After the soup has boiled, remove it from the stove. Place more fresh, finely chopped herbs in each bowl of soup.
