Jam is an excellent delicacy, mostly consumed in winter. It is prepared from fresh fruits and berries, while preserving all the vitamins and nutrients they contain. Rowan has medicinal properties and also tastes great with a slight bitterness. Jam from it will diversify the winter diet and support the body's strength in the cold season.

Instructions
Step 1
Collect mountain ash with the onset of cold weather so that the berries have time to freeze.
Step 2
Separate the rowan berries from the branches, rinse well. Place the rowan in a deep bowl and cover with cold water. Leave it on for a day, then change the water 2-3 times. Drain and let the berries dry.
Step 3
Make a syrup. Mix one and a half kilograms of sugar and three glasses of water, cook syrup from this mixture over medium heat.
Step 4
Dip the rowan berries in the prepared syrup and put in a cold place for a day (for example, on the balcony or in the cellar).
Step 5
Remove the berries from the syrup with a slotted spoon, letting them brew. Simmer the syrup over low heat for about 20 minutes. Then transfer the mountain ash to the syrup again, cook for another 25 minutes. The syrup should thicken and the berries should become shiny. The jam is ready, cool it a little, pour it into the jars, scooping up the berries along with the syrup, and close the lids.
Step 6
Try boiling rowan jam differently for a slight bitterness. Harvest rowan berries before frost (around September). Separate the berries from the branches and place them in a glass or enamel bowl. Send the mountain ash to the freezer for 2 days, and only then start making the jam.
Step 7
Pour cold water over the berries, just like with the first jam options. Change the water several times a day later. Make a syrup.
Step 8
Take two lemons, scald them with boiling water and cut into small pieces without removing the peel.
Step 9
Dip the rowan fruits together with the lemon slices into the syrup, let it brew for a day in a cold place. Further, the procedure for working with jam is identical to the first option: take out the berries and lemon, boil the syrup for 20 minutes, return the fruits and keep on fire for another 20 minutes.
Step 10
Wait until the mass cools down to a warm state, pour into jars and close the lids. The combination of mountain ash and lemon will not only give the jam a pleasant bitterness, but will also enhance its beneficial properties for the body in winter.
