Step 1

Chop the watermelon and peel the flesh. You can leave a small pink layer, so the candied fruit will look brighter and more beautiful. Serve the pulp of the watermelon, as you are used to, or you can cook something, for example, sorbet (or ice cream).

Peel the watermelon rind from the thin green peel. This process is not easy, so you have to be patient and peeler, which will greatly facilitate the preparation of the crusts for further cooking.

Step 3

Next, cut the watermelon crusts prepared in this way into slices half a centimeter thick. Put them in an enamel pot and cover with water so that all the crushed watermelon crusts are only covered with water.

Place a saucepan over high heat and bring the water to a boil. Simmer for 10 minutes, adjusting the heat to your preference, making sure no water spills out of the pot. Remove from heat. Drain the water.

Then pour four glasses of sugar with two glasses of water, cook over low heat until the sugar dissolves and another 5 minutes. Pour the resulting syrup over the watermelon peels, cook over low heat for 15 minutes. Then remove the pan from the heat and leave the crusts to soak in the syrup for 12 hours.

Step 6

Repeat the procedure of boiling in syrup and cooling over the next 12 hours 5-6 times until all the syrup is completely absorbed into the watermelon crusts.

Step 7

After the syrup is completely gone, roll each crust in granulated sugar, then put them in one layer, one slice per sheet, preferably perforated, but you can also take a whole one, covered with parchment.

Step 8

Air dry candied fruits for 3 - 5 days. After the candied fruits are dry enough, transfer them to a glass jar and close the lid.

Step 9

Candied watermelon peels can be served with tea as a dessert, you can add chopped candied peels to cottage cheese, to muffin dough, etc.
