Step 1
Start preparing your fish the day before your camping trip. Take fresh frozen mackerel and thaw it on the bottom shelf of the refrigerator. Remove heads and entrails from carcasses. Rinse the fish under cool running water.
Step 2
Season the mackerel and add a little black pepper, thyme, rosemary, and a few drops of olive oil. Top the fish with the juice of one or two lemons. Do not discard the remaining peel and zest, but cut it into small slices and add to the mackerel. Refrigerate the fish dish overnight.
Step 3
Place the carcasses on a greased grill rack. Place fresh lemon wedges inside the mackerel (you can use lime). Close the wire rack and grill the dish over charcoal for 20-30 minutes, turning occasionally. The readiness of the mackerel can be easily determined by the appearance of an appetizing golden crust on the surface of the fish.
