Orecchiette is an Italian pasta shaped like small ears. Orecchiette can be added to salads or soups. Chicken stew is very tasty with this pasta.
It is necessary
- - 50 ml of olive oil;
- - 5 chicken thighs (without skin);
- - 2-3 stalks of celery;
- - large onion;
- - large carrots;
- - a pinch of sea salt;
- - 2 cloves of garlic;
- - 2 tablespoons of tomato paste;
- - a can of tomatoes in their own juice;
- - 150 ml of red wine;
- - 400 ml of chicken broth;
- - 2 bay leaves;
- - one teaspoon of oregano and thyme;
- - a teaspoon of sea salt (you can use regular salt);
- - ground pepper;
- - 350 gr. orecchiette;
- - a little parmesan to decorate the dish.
Instructions
Step 1
We prepare the ingredients so that everything is at hand.
Step 2
In a saucepan with a thick bottom, heat the oil and fry the chicken on all sides until golden brown. We transfer the chicken to a plate.
Step 3
We spread the chopped vegetables in the pan - onions, carrots and celery. Add a pinch of salt, simmer over medium heat for 5 minutes. Put the squeezed garlic in a saucepan, fry everything together for 1 minute. Add tomato paste, simmer for 2 minutes. Pour in the wine and stir everything again for 2 minutes. Add chicken broth, tomatoes (you must first mash them with a fork), bay leaf, thyme and oregano. Stir and return the chicken to the pot. Close with a lid and simmer for 1 hour over low heat.
Step 4
Shortly before the stew is ready, boil the pasta according to the instructions on the package.
Step 5
After an hour, take out the chicken, use a fork to remove the meat from the bones and return it to the pan for another 15 minutes. Add salt and pepper. After 15 minutes, open the lid and simmer to the desired thickness of the sauce.
Step 6
Put the pasta on a plate, put the chicken stew with sauce on top. Serve immediately with parmesan pieces.
