  • sugar - 1500 g;

  • water - 1 l.

From this amount of ingredients, you will get 6 jars of jam with a volume of 0.5-0.6 liters.

  1. The first step in making jam is preparing gooseberries. Rinse them well in running water, remove ponytails and spouts and dry on a towel. It is important not to crush the berry, then it will be perfectly round and look beautiful in syrup.

If you have the leaves on a branch, it is not scary, so the broth will be rich in color and taste. After the water boils, the fire should be reduced to medium and cook for 5-7 minutes. Then turn off the gas and leave the bowl on the stove until it cools completely. A little trick to create an original gooseberry jam - you need to boil the cherry leaves in advance and leave the bowl with the cooled broth in the refrigerator overnight. Then the color of the finished jam will be a beautiful amber color, and the berries will look like amber balls.

Then we put the basin on medium heat and, stirring constantly, wait until the sugar dissolves completely. After the syrup boils, it should be turned off.

  4. The fourth step - add the prepared gooseberry berries in parts to the hot syrup, mix gently. We leave the mass for 10-15 minutes so that the berries straighten out and take syrup inside. Add a few cherry leaves, previously scalded with boiling water. Then we put the basin on the fire again, let it boil, remove the foam and reduce the heat. We boil the jam in three runs for 3-5 minutes. In the intervals between cooking, let the mass stand for 5-10 minutes. It is important - the fire should always be low so that the jam does not boil too much. Then it will turn out transparent as a tear and the berries will remain intact. It is necessary to make intervals between boiling sessions so that the berries gradually collect syrup inside and remain intact. Short cooking periods keep gooseberries up to 80% vitamin C and all vitamin P.
  5. The fifth step is to pour the hot jam into pre-sterilized jars and close the lid tightly. It is not necessary to turn the jars onto the lids, since the ascorbic acid contained in a large amount is a natural preservative. Let cool the delicious jam and put it in the cellar or refrigerator.
