Veal dishes are juicy and tender and serve as a wonderful decoration for the festive table. Veal is excellently absorbed by the body and contains many useful substances. You can bake veal in foil either in large pieces or in small portions.
In a store or market, choose chilled meat, fillets, tenderloin, neck or bone-in meat are best for roasting. Veal is light in color; also layers of fat and film should be light in color.
Before baking, the meat must be marinated, because then it will become juicy, aromatic and acquire additional flavors. Veal marinades can be based on vinegar, juices, wine, beer, fermented milk products and sauces. Keep in mind that you should not make the marinade too spicy, as veal itself has a special, unique taste.
Veal baked in foil
Chefs recommend baking the veal in one piece, which helps to preserve the juiciness, sweetness of the meat and its nutrients. When roasting veal mixed with vegetables, the sweetish taste of the meat is lost. You will need:
- 2 kg of veal on the bone;
- onions - 5 pcs.;
- 100 ml of olive oil;
- garlic - 1 pc.;
- 100 ml of mustard;
- spices (to taste);
- baking foil;
- greens (parsley, dill, coriander, etc.);
- salt, ground black pepper (to taste).
Remove the bone from the chilled meat, leave some layers of fat. Make several deep cuts, up to 7-8 centimeters. Rub the veal with mustard and spices to taste, insert the cloves of peeled garlic into the slots. Place the meat in the baking foil, season with salt and pepper, cover and marinate for 1 hour.
Preheat oven to 250 ° C and bake for 15 minutes at indicated temperature, then reduce to 180 ° C and continue baking for another 30 minutes. Leave the cooked meat in the foil for 15-20 minutes. Cut the meat into equal parts, place on a plate and garnish with herbs to taste. You can serve veal to the table with any side dish, such as vegetables, as well as vegetable salads and even fruits.
Veal baked in foil with vegetables
Veal baked in foil in an airfryer, together with vegetables, is very tasty. You will need:
- 600 g of veal (fillet);
- 50 g lard;
- onions - 2 pcs.;
- leeks - 1 stalk;
- carrots - 1 pc.;
- tomato - 2 pcs.;
- 100 g of celery (root);
- greens (parsley, cilantro, dill) - 1 bunch;
- salt, ground black pepper (to taste);
- baking foil.
Cut the veal and lard into small pieces. Peel and chop onions, carrots, celery roots. Wash the tomatoes and cut into slices. Wash greens (parsley, cilantro, leeks, etc.) and chop finely.
Combine the components with each other: meat and lard, vegetables and herbs, add salt and pepper. Place all ingredients on baking foil and pack carefully. Place the foil on the grill of the airfryer and bake at 250 ° C for about 40-45 minutes.
