Instructions

Step 1

First, break the eggs and place the whites and yolks in separate dishes. With the yolks, do the following: after adding granulated sugar, beat until you get a light mass, the volume of which has become larger than the original.

Step 2

Rub the lemon zest with a small grater, then mix it with ingredients such as cornstarch and wheat flour. Mix everything as it should.

Add a pinch of salt to the proteins. Beat everything until you get a mass with a stable white foam.

Step 4

Add a tablespoon of the whipped protein mass to the sugar-yolk mixture. Mix everything properly. Then add a tablespoon of flour mixture there. Stir again. Do this until you run out of added mixtures. The result is a homogeneous dough for the Savoy sponge cake.
