Pickling is a great way to harvest mushrooms for the long, cold winter. In this way, all useful substances are preserved, as well as amazing aroma and taste. The porcini mushroom is ideal for pickling. Only whole, strong specimens should be chosen. Be sure to use acid and all kinds of spices.
Pickling with vinegar
This recipe is one of the easiest and most affordable ways to marinate porcini mushrooms.
Ingredients:
- porcini mushrooms, 1 kg;
- bow, 1 head;
- vinegar (6%), 50 ml;
- salt;
- spices to taste (peppercorns, bay leaves, cloves).
Prepare porcini mushrooms: rinse well, remove any stains, cut into cubes. Pour 250 ml of water into a saucepan, put bay leaves and salt, bring to a boil. Boil the mushrooms there for 20 minutes until tender, and then discard them in a sieve or colander. Pour all the remaining liquid into another container, remove the bay leaves, add vinegar, pepper and cloves. Cut the onion into rings, put in a sterilized jar.
You can sterilize the jar in different ways, for example, in the oven, microwave or multicooker.
Place the boiled mushrooms on top of the onion and roll up the jar. It is necessary to store such blanks of porcini mushrooms in a cellar or refrigerator.
Marinating with vegetable mixture
Porcini mushrooms can be marinated with vegetables, then their taste will turn out to be quite original.
It is easy to make a salad from such a blank, besides, it is perfect for serving with mashed potatoes and other side dishes.
Ingredients:
- porcini mushrooms, 1 kg;
- water, 500 ml;
- sweet pepper, 1 piece;
- vinegar (5%), 100 ml;
- carrots, 1 pc.;
- sugar;
- salt;
- spices (peppercorns, bay leaves).
Soak porcini mushrooms in water for 10 minutes, peel and cut into small pieces. Prepare your vegetables. Grate the carrots on a coarse grater, cut the pepper into cubes. Put a saucepan with water on the fire, after adding spices, salt and sugar.
After boiling, put the vegetables in the water, pour in the vinegar and cook for 5 minutes. Place the mushrooms in the marinade, boil them for 20 minutes over low heat. Pour into jars, cool. Such marinated porcini mushrooms can be stored for a long time in the refrigerator without any problems.
Pickling small mushrooms
For preserving mushrooms, you can select only the youngest and smallest ones, then they will turn out to be very delicate and original. Such mushrooms will not only be pleasant to eat, but also to decorate festive salads with them.
Ingredients:
- porcini mushrooms, 1 kg;
- apple cider vinegar, 120 ml;
- spices (laurel, cloves, peppercorns, cinnamon, star anise);
- citric acid, 1 g;
- salt;
- sugar, 1 tsp.
Rinse the mushrooms well. Without cutting, simmer in salted water for 20 minutes, then discard on a sieve or colander. The broth can be poured out or used for other purposes. Pour new clean water into a saucepan, after boiling, add 1 tbsp. a spoonful of salt, apple cider vinegar and mushrooms, cook for 20 minutes.
Pour the marinade along with the mushrooms into sterilized clean jars, roll up the jars. Marinated porcini mushrooms prepared in this way can be stored for more than 1 year.
